When the IFC mall was constructed in the middle of the Central waterfront, open spaces with panoramic views of Victoria Harbour and Kowloon - a hot commodity in Hong Kong - were left on the top of the building for the public's delight. H One, the flagship restaurant of the Harlan G Concepts group, capitalises on both the open space and the amazing view through its restaurant and adjoining bars, G Bar and The Box. Wide windows and box-shaped bar spaces bring the outside in, resulting in impressive views of the city from every corner.

Rated among the upper echelons of dining options, H One fuses Italian, Mediterranean and Indian cooking techniques in its international menu. The main dining areas are spacious, dark-toned and vibrant, while the kitchen holds the restaurant's signature grills, tandoor oven and rotisseries.

Before filling up on the delicious bread that arrives at the table, go for one of the restaurant's starters, such as the 36-month aged Parma ham with sweet Italian melon and rocket. The traditional combination of savoury and sweet, encircled by truffle sauce, is a great way to start the meal.

From this Italian treat, move on to one of the Indian specialities, such as the fragrant black pepper and cheese silk chicken kebab, served with herb salad and minted raita. The chicken softly melts in the mouth while the whole black peppers give off a tingling aroma and taste. For a zesty kick, the Sardinian smoked eel angel hair pasta topped with a dollop of caviar is an original combination that earns high marks bite by bite, while the thin-crusted pepperoni pizza with olives, mushrooms, garlic and basil is a traditional dish with a rustic flavour that is sure to satisfy.

Getting to Kyo Hachi is half the fun. After a ride up Victoria Peak on The Peak Tram, climb the M C Escher-like system of escalators to Level 2 of The Peak Tower. Once there, the restaurant is hard to miss as its sample dishes and captivating view are on display through an enticing glass window.

With floor to ceiling windows, the panorama from Kyo Hachi is nothing less than breathtaking. From this perch at the top of Hong Kong, the weaving harbour and soaring skyscrapers make an incredible sight. The effect is also absolutely relaxing; giant cruise ships appear miniscule and the millions of people in the crowded metropolis are unseen.

Kyo Hachi is purely contemporary Japanese, from the interior to the food. The simple, slick decor makes it an easy place to sit leisurely, while the cuisine pleases the palate. The Kyo Hachi Roll, the restaurant's signature sushi dish, is a beautiful arrangement of deep-fried soft shell crab with avocado, cucumber, crab roe and mayonnaise. The different layers combine varying textures and tastes to make it an instant favourite.

Not only does Kyo Hachi have a sushi bar, it also has an authentic teppanyaki counter grilling up made-to-order specialities from Japanese-style beef to foie gras. Each selection arrives at the table still steaming and utterly appealing. The king prawn teppanyaki is definitely king size, with the taste to go with it, while the salmon teppanyaki is deliciously fresh.

Tempura, another standard Japanese dish, comes in a number of variations at Kyo Hachi. Choose from seasonal vegetables and seafood, all lightly fried with their core tastes maintained.

The view from The Peak is a must-see for any visitor to Hong Kong. At Kyo Hachi you can enjoy it over a nice meal.

Not only does Dynasty Restaurant specialize in classic Cantonese cuisine, it also has a sweeping view of Victoria Harbour. In fact, Dynasty has become a regular dining spot for local families, business people and tourists who wish to sample the cuisine that puts Hong Kong on the dining map.

Dynasty takes up a sizeable space, with walls of windows and a view from every table. The venue is elegant, with a giant chandelier at the entrance, while still being comfortable and relaxing for diners. Attention to detail is apparent from the selection of teas to the colourful table settings, decorated with an iconic Chinese fairy.
The menu features authentic Cantonese specialities and family-style recipes in a stylish manner, using only fine and seasonal ingredients. Cantonese cuisine is known for its fresh ingredients and the use of very few spices. Instead, steaming, stir-frying and natural oils are used to bring out the pure flavours of the food.

Chief Executive Chef Tam Shek Lun started cooking at the age of 13 in a house full of chefs, and harmoniously combines age-old customs with new formulas. For instance, the popular steamed crab claw is served with parsley and preserved egg, a secret recipe passed down through generations.

The classic theme continues through every selection. The barbecued pork is tender and sweet with an amazing barbecued aroma. Baked garoupa, the classic Cantonese dish, arrives at the table steaming and simmering and tastes as fresh as the morning's catch. A nouveau take on Cantonese dessert is the chilled sago cream with mango and grapefruit, an utterly refreshing end to the feast.

Dynasty is best enjoyed over a leisurely meal, as it captures the essence of Hong Kong with views of the harbour and authentic Cantonese recipes.
